1 large head cauliflower finely chopped
1 Tbsp butter or margerine
1 cup chicken broth
1/4 cup lowfat milk
1/4 cup lowfat sour cream
1 cup shredded sharp cheddar cheese
2 Tbsp minced garlic
2 Tbsp chopped green onion
Sea salt & crushed black pepper
Simmer chicken broth, butter and cauliflower 8-10 minutes, add garlic, onions, salt and pepper then transfer to blender. Stir in remaining ingredients and puree! Here I bbq'd chicken apple sausages in a sinch.
